With over 15 years of culinary expertise, chef Arif Quraishi is the torchbearer of Murshidabad cuisine, a rare and refined aspect of Indian food heritage. Chef Arif was born into the culinary master’s lineage along with his grandfather Haji M. Azghar Qureshi and his father Abdul Salaam Qureshi. As his mentor, Arif Chef Arif inherited people’s passion for keeping ancient traditions while embracing contemporary art.

Murhidabad was once a thriving royal hub for Bangladesh, with the magnificence of Mughal grandeur and full of Awadi, Bangladeshi and Persian influences. Chef Arif is dedicated to discovering and perfecting its forgotten gemstones – views such as the aromatic Murshidabadi Rezala, Turnd Chaanp and the saffron Pulaos, full of dried fruits and exquisite spices. His approach balances authenticity with innovation, ensuring each dish maintains its historical roots while attracting modern taste buds.

In April this year, food lovers in Hyderabad were invited to experience this exquisite cuisine at the Meshida Badi Food Festival, hosted by Bidri, an iconic Indian restaurant in the hotel and conference centre of Hyderabad. From April 11 to 2025, chef Arif Quraishi will offer a well-curated menu that reflects the affluence of Nawabi’s feast, with each bite telling the story of the royal kitchen and culture fusion.

Chef Arif’s commitment to revive Mersidabad cuisine is not only a tribute to his legacy, but also a celebration of India’s diverse culinary landscape. Through his work, he invites diners to travel through time – a rich taste, profound story, and a tradition on every plate.
