Summer cooking tour

In summer, life is easy! But sometimes, hot heat can cause stomach upset and even hot winds. It is important to keep it cool and hydrated to sail throughout the summer. The food choices we make during rising levels affect the level of staying cool. So let’s dive into a healthy summer diet.
Cool regional cuisine
The culinary diversity in India shines in the summer months, when kitchens across the country turn to ancient recipes designed to beat the heat. In the south, dishes like rasam, curd rice and tamarind rice have a rich and refreshing comfort. In the north, families love Moong Dal Khichdi, Aam Panna and Khatta Baingan – simple preparation. Oriental Aam Dal with green mango lentil dish brings a cool magic that balances sweet, sour and salty flavors. “Green mango fish curry is a summer staple, especially in the West and South coast, pairing the heat of spices with the cooling tang of raw mango,” says Ravinder Kumar, Executive Chef, Karma Lakelands (Gurgaon) adding, “Summer is the season to eat cooling fruits and vegetables. We add seasonal produce into raitas and fresh salad to help guests stay light during the season.”
Summer menu
Summer food should rejuvenate, lightweight and comfortable. Even in summer, even restaurants and cafes will introduce more cooling drinks, citrus sprays, fresh smoothies, cold smoothies and light rice or cereal bowl dishes. “Watermelon is hydrating, cooling, and mango is a classic in summer. It’s not a coolant – it produces heat. I prefer to pair it with mint or curd to balance it,”
Parth Gupta, chef and founder of Cicchetti Italiano in Delhi. In summer, water is abundant with fruits and vegetables. Must enjoy mint, kokum, lemon, coconut water and light vegetables like Turai (Ridge Gourd), Lauki (stomach gourd), Tinda (round gourd), which are gentle on the guts all over India and are very versatile in preparation throughout India.
In summer, it is important to focus on foods that cool and prone to stomach. Mugdha Pradhan, a functional nutritionist, CEO and founder based on Pune’s health and wellness platform, is a great way to support gut health and keep your body cool.
Hydration is important
Hydration is the key to preventing fatigue and dehydration in hot weather. In the summer, Talgoda, Munjalu (Ice Apple) is moisturizing and easy to obtain. Sol Kadhi is a refreshing drink in Maharashtra, Goa and Karnataka, made from sour fruit Kokum. Bael Sherbet (Wood Apple) is popular in Bihar and Odisha, naturally sweet and perfect for digestion. Coconut water is an electrolyte-rich drink that moisturizes. Water infused with lemon, mint, or cucumber (for flavor rather than juice) has a cooling effect. “It is recommended to use traditional drinks made with original mango or homemade electrolyte drinks such as lemonade and pink salt. Instead of sugar, add a natural sweetness with raw honey.”
Food should be avoided
Avoid foods that generate too much calories or burden the digestive system. Spicy and oily foods, thick curries and dishes filled with red peppers can over-stimulate digestion and increase calories in the body. Refined sugar and sugary candies, including packaged desserts, cold drinks and soda water, can cause inflammation and slowness. “Fermented foods or leftover foods or fermented batter can cause bloating and acidity in humid climates. Alcohol is dehydrating, which can overload the liver and is best avoided during peak summers,” Pradhan said.
People should also avoid street food in the summer because high temperatures increase the risk of contamination and foodborne infection. Fresh homemade meals support better digestion and keep you safe from infection.
